Spinach Lasagna Rolls

For awhile, I was on a lasagna kick. I made white lasagna with artichokes, lasagna with spinach, plain old boring lasagna with lots of cheese. So when I saw a recipe on Pinterest for lasagna rolls, I had to try it. I like these because they are much easier to serve than regular lasagna.

First, cook your lasagna noodles so they have time to cool a little. Then saute spinach in olive oil and garlic. Then combine ricotta, spinach, Parmesan cheese, mozzarella cheese and an egg.

Spread spinach/cheese mixture onto cooled lasagna noodles.


Spread just enough pasta sauce to coat the bottom of your pan. Then add lasagna rolls.


Sprinkle with more mozzarella.


Bake at 350 for about 30 minutes.



  • 6 lasagna noodles
  • 1 bag of baby spinach
  • 2 Tbps olive oil
  • 1-2 garlic cloves
  • 1 15oz jar of ricotta
  • 1/4 cup Parmesan cheese
  • 1/4 cup mozzarella + more for sprinkling
  • 1 egg
  • Pasta Sauce


Preheat oven to 350. Cook lasagna noodles. Saute spinach in olive oil and garlic. Combine spinach, cheeses, and an egg. Spread spinach/cheese mixture onto semi-cooled noodles. Spread pasta sauce onto bottom of baking dish, just enough to coat. Set rolls into baking dish, spread a little apart. Top with mozzarella. Bake for about 30 minutes.

This lasagna dish was so easy to make and it was delicious! It was also so much easier to serve and eat because it was already portioned out. Next time, I would make more noodles and double the spinach/cheese mixture. We ate all of it and I think it would have made good leftovers!
