Stuffed Turkey Meatballs

I might be obsessed with Pinterest. Although, I don’t know how you could not be.

Tonight’s recipe of Mozzarella Stuffed Turkey Meatballs was found there and comes from Brown Sugar.

Ingredients:

  • 1 lb ground turkey
  • 2 eggs
  • 1 cup bread crumbs
  • 1 tsp basil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup Parmesan cheese
  • salt & pepper
  • 6 string cheese, cut in half
  • olive oil
  • spaghetti
  • pasta sauce

Directions

Finely chop the onion. Combine turkey, eggs, bread crumbs, basil, onion, garlic, Parmesan, salt and pepper. Divide into 12 equal pieces. Surround each half of cheese with a portion of the meat mixture and form into a ball. In a large skillet, head olive oil over medium heat. Place meatballs in oil and cook for about 6 minutes per side. Then pour sauce over meatballs. Cover skillet and simmer for 20 minutes. Cook spaghetti while meatballs are simmering. Serve meatballs over pasta!
