MIA & Baileys Cupcakes w/ Cream Cheese Frosting

So I know I have been MIA lately, but I have a good reason for it. I can’t get my pictures on my computer! And I don’t like to post without adding pictures, its just so boring then. I have a spot on my computer that I can slip a camera’s memory card into, and upload pictures straight from the card. Well last time I tried to do that, it wouldn’t recognize that there was anything in it. I tried to do a million different things and couldn’t get it to work. One of my co-workers suggested just plugging my entire camera into my computer and uploading that way – duh. Problem is, the box my camera came in is also MIA.  I literally looked every place I can think that it could possibly be and I can’t find it. This whole situation is so frustrating because I just want to share my delicious food!

Since I’ve made these Baileys Cupcakes before, I searched my phone for some pictures. I found one. Good enough for me! So here it is! I found this recipe on Pinterest and made them for St. Patrick’s Day. They were a big hit!

Ingredients:

  • One box dark chocolate cake mix
  • Eggs
  • Oil
  • Water
  • Baileys Irish Cream
  • 8 oz cream cheese
  • Confectioners’ sugar

Directions for Cupcakes:

Make cake according to box’s direction, except substitute about half of the water for Baileys. (Ex- Box calls for 1 cup water, add 1/2 cup water & 1/2 cup Baileys).

Directions for Cream Cheese Frosting:

Beat together cream cheese, 2-4 Tbsp Baileys (or milk), and confectioners’ sugar. Start with about 1 cup of sugar and add more until you get the desired thickness.

Make sure your cupcakes and completely cooled before you frost them! For St. Patty’s Day I added green food coloring to the cupcakes.
